I like a solid ending that ties up everything (unless there's a sequel of course or manga extension). Prefer happy endings especially if done in either a spectacular or unexpected way. Cowboy Bebop is an exception but I would have liked to have seen more random episodes if it was going to end like that, felt too short because it was so good.

I love a good gothic ending. I grew up with Disney bullshit and I like to see the bad guy win every now and then. Its much more realistic.

I like all types of endings, but to that effect I also hate all types of endings, it just depends on my particular feelings about an anime. The degree to which I like or dislike and anime has a lot to do with the characters and character development throughout a series. For example I hate anime endings that get rushed because after a half dozen good episodes the producers decided to turn (oh say in a 26 ep. anime) episodes 7ish through 18ish into fluff that usually involves new characters or gratuitous trips to the beach/pool/hot spring just to name a few examples. Actually I don't really mind the beach/pool/hot springs eps. but they usually occur after a " major event" in the anime and it ends up kind of being like a reset where there is nothing said of what occured an ep. or two ago and the episodes afterwards are unaffected by the usually fan service heavy ep. I also dislike the ends of long running series, usually something that ends up being more than 52 eps. has an anticlimactic ending that could have been achieved in 12-14 or 24-26 eps. Endings that are pretty evident after say about 5 eps. in a 24-26 ep. anime are also pretty lame.
I do like mind screwing endings provided they're well done with a lot of play up to the end or endings that after you've seen them you run back through the eps. in your head and go "Oh, that does make sense." The ending of an anime while mildly disagreeable to me personally can also be enjoyed to some extent if certain factors are met, for example in Shuffle! I was rooting for... you know who, and while the ending I thought was kinda "meh" I still enjoyed it because my horse came in first.
As said earlier the endings to some extent should be reflective of the genre and certain genres of anime play better with certain ending types so there really is no "perfect ending."
Endings I've enjoyed however include off the top of my head:
School Days
Cowboy Bebop (Who doesn't like the ending to Bebop it was perfect-ish)
Ghost in the Shell: 2nd Gig
Samurai Champloo
True Tears
Samurai Deeper Kyo
(I decided to omit comedy/ecchi animes as they are generally meant for purely episodic enjoyment and an episode at the end that ties things up is generally a bonus episode from the producers with a little note that reads "Uhhh we ran out of material thanks for watching.")

I watched alot of disney movies as well in the 90s. I think Bambi was the only movie that didn't end with a perfect ending.

I watched alot of disney movies as well in the 90s. I think Bambi was the only movie that didn't end with a perfect ending.

It's particularly bad considering most of the fairy tales that Disney stole to make his movies didn't have happy endings.

The Little Mermaid. In the end she doesn't get the prince but instead turns into sea foam.
Cinderella actually kills her first step mother so that her father will marry the house maid.
Sleeping Beauty is impregnated by the Prince while she sleeps and is only awoken when she's given birth to twins. Oh and hte prince was already married at this time.

Best Fairy tale ever is Penta of the Chopped-off Hands
In this Italian tale, the king’s wife dies and he falls in love with Penta… his sister. She tries to make him fall out of love with her by chopping off her hands. The king is pretty upset by this; he has her locked in a chest and thrown out to sea. A fisherman tries to save her, but Penta is so beautiful that his jealous wife has her thrown back out to sea. Luckily, Penta is rescued by a king (who isn’t her brother). They get married and have a baby, but the baby is born while the king is away at sea. Penta tries to send the king the good news of the baby, but the jealous fisherman’s wife intercepts the message and changes it to say that Penta gave birth to a puppy. A puppy?! The evil wife then constructs another fake message, this time from the king to his servants, and says that Penta and her baby should be burned alive. OK, long story short: the king figures out what the jealous wife is up to and has her burned. Penta and the king live happily ever after. I can’t really figure out what the moral of this tale is.

The ending isn't any where near as important to me as the plot/characters through out the series. Different endings fit better for different storys.

The only ending I hate is when an annoying char doesn't die or go away.

I hate him!!!!!!!!!!!!! Why didn't everyone just kill him? And a slow pain full death would have been most satisfying.

I thought the ending to geass was great. It was the happy/tragic ending. Making everyone believe the world was kosher, while also dooming the protaganists to their corresponding fates. I felt the few episodes leading up to it dragged a little, but the ending was perfect.

I don't think the ending would've been nearly as effective without the few episodes leading up to it, they needed to cool the tension down before raising it up again.
