what is *rewatching* anime like?

I think it varies from person to person, but in my personal experaince, I have a few that I watch at least once a year because I really enjoy them.  Ex.  Kanon 2006, Fate/Stay Night, and Elfen Lied.  It is just like rewatching a movie or anything else.

One thing is for sure, no matter who you are you need to track what you have watched because there is so much out there.  This way you can remember if you liked it or not, and if it is worth the rewatch.

I rewatch anime mostly if they are so deep or convoluted that additional watchings are in order to fully understand it. Things like Serial Experiments Lain or Revolutionary Girl Utena.
If a anime has very good character development or very deep characters I might rewatch it to fully grasp the characters. Revolutionary Girl Utena is a stellar example, as all characters develops and are rather deep and fleshed out.
I also rewatch things that I have a high emotional attachment to like Haibane Renmei.

Also, sometimes I rewatch stuff because I'm bored and want to watch something that I already know how it will turn out.

depends on why ?
l like rewatching some hentais cuz they had some decent plot, or the artstyle was good enough, tough l have to say this, in Hentai, it's very rare that art style outside of hentai scenes are as bad as the hentai scenes at all, usually it's like, "oh the story so far is quite ok and the art is nice, oh waitm sex scene and the art style is worse than the crap l made this morning" like that...

tough Bible Black is an exception, since they tried hard to let the art style work around at all times. Altough l'm not watching as much hentai as l was some years ago, l don't find a need for it, just for a twist of mood and to see what they came up with again.

I only re-watch things that are truly good. And only after at least two years have passed, preferably four years. So that I have forgotten most of the details and they can provide me with oh and ah experiences when the most important parts (plot and characters) are already known.

It is better than watching a bad series, but not better than watching a medium series. At least for me.

I tend to rewatch certain episodes of my favorite series more than watching the entire thing. Unless I really enjoyed the story, in which case I'll watch it all. And then there are some series that I'll never watch again, even though they're some of my all-time favorites. It just depends on the series in question.
