what is *rewatching* anime like?

Rewatch whenever you're in the mood for it. I usually don't rewatch an entire series unless I really liked it or unless I'm in the mood for it.
I rewatch single episodes or arcs quite often though. Many times you might noticed things you missed the first watch, and that's always nice.

I usually only rewatch series which don't have an overarching plot, because I have a pretty good memory, so plot twists are a one-time thing for me.
Rewatch value for me lies in a few areas:
situational comedy (ala Lucky Star, Hyakko, Kazemakase Tsukikage Ran and SHAFT stuff generally),
relaxing or soothing atmosphere (Sketchbook and Aria mostly),
or single episode/short arc plots (Yakushiji Ryoko no Kaiki Jikenbo, Natsume Yuujinchou etc.).

Most series are not worth rewatching, to me. If I rewatch an anime, it's usually because it's been a while and I want to relive the story. I let a few months pass by, just enough for me to forget a few details and be able to have a few surprises and enjoy the retelling.
There are, thus far, two exception to that rule: ef (both Memories and Melodies) and Bakemonogatari.
Two reasons:
1. They are so god damn good that I want more, and all I can do is rewatch episodes
2. I feel I get parts I didn't each time I rewatch those

The answer depends on when was the last time you watched it. Did you watch it several years ago? Did you just watch it last week? Were you still a kid when you last watched it? Rewatching anime after several years will give you a different viewpoint. You may see the anime in a different light which may make you enjoy those titles you didn't enjoy before or dislike your highly rated shows of yesterday.
I've rewatched a certain episode 8 times these past few weeks simply because it was the latest episode. Imagine how I feel.
