I think all they do is rip the streams. They don't encode nor translate anything, and they don't do a quality check either... I'm not sure if how they put the subtitles in though.. when they rip the file must already be in mkv or something...

At the Otakon Fansubs & Industry panel, it was mentioned that HorribleSubs sometimes adds mistakes to CR's subs to make them look worse. Why, I don't know. Maybe to spur people to download "scene" fansubs rather than sign up for Crunchyroll's service?
