Umm... the clutch IS a brake in the first place... it just isn't a vehicle brake, it's a transmission brake
what you are describing isn't clutch-braking, it is engine braking... you are using the transmission to transfer the torque from the drives into the non-firing engine as the point of resistance... If your torque limiter doesn't give first, at those speeds you are most likely going to loose traction, and probably go into a spin if you have a 2 wheel drive vehicle, or a slide if you have a 4 wheel vehicle...
you would be better off just going into neutral (and let the engine die) and steering safely past any obstacles (if you have power steering, you will want to turn the key off, and then back on (but not start the engine) if you loose steering assist... in most modern cars the steering assist doesn't require the engine actually be running

Too bad the driver(s) weren't as knowledgeable about the car(s) they were driving as those who don't drive them. I'm pretty sure that thick manual has something to do with how the car works; but that's just my guess.

I read those manuals, hell I spent a whole day reading the one for my mums car when she got it new.
