it all depends on ammount of items in display and hightened quality, and dynamics, if it was possible to have it lesser than 500 l'm sure they would do it, encoding means also compressing the video, wich in some cases is dificult, 900mb katanagatari o_O?
if the program can't do anything more you can't help it, maybe they squeze the CPU too hard and it's reaching it's limits as well.

Well, the past 2 months with doki that i've seen... they have it rough, 'cause of IRL stuff... so maybe they are just lazy? and doesn't care about trying making it smaller
Cuz' I've Encoded some Fate/Stay Night 1080p Episodes, they were ~480mb/episode, and i Encoded them down to ~180mb with no Major Quality loss, think i just lost 400bitrate of the video.. so i think doki is just lazy.

l still have my record breaking encode of Elfen Lied that l made, entire series in 340mb, OP/ED cut out, only the first and last eps have them, 800x600 res, l stopped doing encoded a few years back but it's definitly possible to do decent encodes in small files, but you need good shit to do it.

Well, i started with Encoding etc 4 months ago... getting better and better, ^^ i think it's fun xD
But yeah, you need "Good shit do good things"

Idd, nowadays you have about 1TB+, so 500MB is nothing
But tho,...it's still too big for a 720p file., AB's 720p is ~250+

I have yet to see a blueray sub that is 720p and has a filesize only 250 megs, 400-500 is normal for 720p bluray. Also filesize really isnt that big a deal unless you are really cheap or something. I mean right now 1tb drives are like 100 bucks and if you want to maximize space can always buy drives up to 2tb's for personal computers so I dont really see the issue unless you have no money or dont save anything.
