This is a tough call. I'm gonna have to go with GAINAX.
I love Gainax series because they tend to be wacky, filled with action and excitement and over the top (especially in recent years with Diebuster, FLCL, Gurren Lagann and even a bit in Shikabane Hime). GAINAX also comes up with some extremely unique settings and sets up great universes- like in Gunbuster and Eva. GAINAX also tends to explore the nature of humanity and psychological concepts, which interest me greatly. Also, while many hate GAINAX's angsty characters, I actually think GAINAX pulls them off rather well.

2- if youre so interested in human psuchology, welcome to the University, and explore it further there to your hearts content ^^
l think all studios do their best, and choosing one isn't such a good idea, every studio mentioned here did something they can be proud about, one way or another, l think making a poll is a bad idea tbh.

Gonzo recently got absorbed by their parent company due to financial difficulty, and the parent company took the name Gonzo... Gonzo just recently gave AIC the rights to do Strike Witches 2. So it looks like they're doing some IP restructuring. Now hopefully they can focus on Saki season 2... ;)

note: i'm 6'1', ton's of fun lalala and.. i am partial towards Seinen manga and anime features. Madhouse made my #1 for a few reasons, primarily: 4 of my favourite animators/directors work there: Yoshiaki Kawajiri, Satoshi Kon, Masayuki Kojima, Rintaro. They also have the temerity(nerve) to make features that other studios would never touch.
