That's kind of what I was going for myself. I didn't want to be too biased with my own likes and dislikes.
For instance, my favorite show currently is Saki (my avatar/sig for the last half of this year)... It's an ecchi moe blob show about Mahjong. It's a decent enough show, but doesn't deserve to be on the list unfortunately. :P

What a difficult task, but something like this I guess:
Mononoke
For telling Japanese horror tales in artistic and unusual way.
12 Kingdoms
Epic fantasy that worked.
Mushishi
A calm anime that soothes the mind.
Detroit Metal City
For its unique manga like visuals and awesome characters. Hilarious.
Kino no Tabi: The Beautiful World
An anime that combines history with life's hardships.
Paprika (movie)
Triggered the viewer's imagination and left us wondering where the line between dreams and reality is.
Lucky Star
Combining all things we love about Japan: loli, food, games, school girls etc etc. Has my vote over Haruhi.
...and that's it so far. It's hard to say which ones are the truly epic ones... :-\ Many good ones have already been mentioned.

Paprika was outstanding, in fact I just bought it yesterday at a Blockbuster that was closing down where it was on sale for 5 bucks! I love Satoshi Kon-Paranoia Agent is one of my favorite series.

Pale Cocoon - 1 episode OVA about a post-apocalyptic Earth in which humans changed everything natural to technological and is living in metallic colonies. Very short and simple story, though it touched me with the loneliness atmosphere throughout the 20 minutes. If you enjoyed Blame! then you'd like this, it's more human and emotional.
Higurashi no Naku Koro ni + Kai - Mixed anime with a very dark and disturbing feel at one point then a refreshing and happy environment at another point. The story just kept getting better and better admist some very confusing parts and some mysteries left unclear, plus, I do like to see main characters die once and a while, without their invincibility mode.
Baccano! - Very mixed up chronology during the anime, but that does not hinder the fact that the whole story and characters intersect and influence each other in a clever way.
Sounds more of a recommendation than a nomination, huh.
