Mushroom Mix Pasta
Ingredients
2 1/2 tbsp Olive Oil
1 onion, chopped
2 cloves garlic, minced
1 carrot, diced
1 celery stalk, diced
6 1/2 cups chopped mushrooms
1 cup stock
salt/pepper to taste
Pinch of nutmeg
A bay leaf
1 can diced tomatoes
1 can tomato paste
Spaghetti
Grated Parmesan cheese
Preparation
Add oil to sauce pan; Cook onion/garlic/carrot/celery/mushrooms, stir ever 5 mins for 15 mins - add stock, salt, pepper, nutmeg, and bay leaf for 'nuther 5 mins then add canned tomatoes and paste, boil and then let simmer for 20 mins. Throw bay leaf out.
Meanwhile, cook pasta 'til tender but firm; drain and pour on the sauce and cheese,
