There are two of them in every level, and they are in so obvious places that everyone misses them due to being far too visible. If you get everyone in every level up to the last one, you get a special ending where you ingest an enormous star and the world goes black, as the sun has disappeared.

Stars exist, but they do nothing of what I've described. You should still try to find them, though, as it's worth it in the end.
