How do i find the information about a video? The bitrates and everything.

Often the video player you use will have a media info button built in that will tell you.

Try Tools > Codec Information from the menu.

check the tabs for more info if available for that file.

It has a whole bunch of information under tabs such as: Stream 0, Stream 1, and Steam 2. How do i know which to pick?

The info about the audio and video(etc.) should be separated in them, so just look in to the stream that shows the information you need.

That's usually cause its VFR or VBR - just use http://anidb.net/perl-bin/animedb.pl?show=file&fid=723149

Generally on the anime page find the group you want and click on status (complete/stalled/dropped) now on on the individual episodes list click the id of the episode to see the stats for that ep.
