burning an anime to dvd.

Most DVD players I have seen won't tough AVI files.  Only thing they will play is the .vob files with everything setup correctly in the VIDOE_TS and AUDIO_TS folders.

Soon as I get home (I'm screwing around on my break at work) I will look at what I have been using - I can't remember what its called.

I am specifically interested in making the videos so they will play in any DVD player as TorturdChaos mentioned. (VIDEO_TS and AUDIO_TS folders).

This is really for DIVX players, which are able to navigate data discs (no different to a hard drive) and can read some varying formats depending on the model. Many newer ones recognise the .avi container but you have to be careful about what profiles the player can support and read, eg many don't handle more than 1 b-frame, or only play some sound formats etc.

Well, this is an actual DVD format, just like the ones you get in the stores, only difference is there is no region encryption, so you can see the .vob files etc if you mount the disc. This, as you've guessed, zammazingo, is the best choice for compatibility. Downside is, you won't get as much on a disc as with a data disc.

Mostly, you can convert pretty much any encoded anime to this format on the fly, but some arrangements of audio/subtitles can cause problems, tools depending. Best bet is to get some test discs working with your player/burner using some hard-subbed animes first, so you know the tools are working before you move on to introducing something more complex. And yes, you can convert .mkv into DVD just as easily as anything else, its just a container, you take out the audio/video and put it in another container. You can even make menus and shit!

Sadly, I kicked Windows out of my house some years ago and it never came back, I hope TorturdChaos will come back in a minute and point you at some tools, and perhaps comment on subtitles etc. Have fun! ;)

I've used DeVeDe the few times I've wanted to burn anime to disc.  There is a Windows version.

The only two issues I have with it are that it lies about how much space files are going to take (which is why I create an .iso first, rather than burning it straight to disc) and that there's no way to use multiple audio tracks.  Other than that, though, it's pretty nice.

You can burn any video you like to any sort of disc.  The important difference is that DVDs store much less data than BluRays, so you may have to downgrade your video for it to fit (or split it onto multiple discs).  A lot of people used to do this for CDs, which is why you'll find all those 700 megabyte encodes of movies floating around.

Find a program.  Plug files into it.  Repeat until satisfied.

Pretty much like any other software solution.
