Plus everyone is hating on things that I think make the run of the mill animes great to watch (accidental ecchi, nosebleeds, skirts flying up, slapstick). Take all those elements out of the shows that have them... tell me what you got.
3 of the things you listed are on my "hate" list, but Nosebleeds are awesome. My main beef with all of them, to answer your question, is that when you take all of them out, you are left with nothing, no substance, no plot, no interesting characters... nothing. Good shows have good characters, good plot, good "world", but not so good shows hide their lack of these elements with all sorts of random fanservice. Being a guy who doesn't care much about fanservice, shows that hide behind it with nothing else to offer annoy me to no end.
For example, I'm a huge fan of Gurren Lagann, but Yoko's the one character I just couldn't stand in there, aside from the first half of episode 21(where she's given depth as a character), and like the three times she's involved with plot in any meaningful way.
And on my list of things I hate I must add harems. Especially surprise harems. I think, to date, Clannad is the only show I watched that ever used a harem and did not annoy me, but mostly because of the resolution of it.
