well yea, i just read the fans specs about the 3wires, its actually Vin(red) Vout(black) Ground(brown) the paper with the fans that is included when you buy the fan says that theres 6 coils that moves the fan, half of those are controlled by the ground wire so disconnecting the ground wire would leave the fan running at only with 3coils on them hence approximately running at half =D(the "ground" label is quite confusing indeed, they just should've made it like Vout1 and Vout2) its an industrial brushless muffin fan mind you =P, i only turn them on full when i`m actually running at more than 90% which is almost impossible, i could run my pc at 42c idle and up to 57c full 100% load when i set it off to half, when i switch it on it runs at 38c idle and 49c full load, this is during summer which is the hottest month of the year and i`m using the crappy stock heatsink/fan =P

The layout of the case and cable management etc usually makes more of a difference than the actual fans.

The choice of fans matters more for the sound level, though.

Larger more high quality fans move air more silently.

Personally I have three intake fans, and one exhaust fan (which is also the CPU fan, it's a closed loop water cooling deal).

The air temperature in the case is usually at about room temperature, the CPU fan is almost never actually rotating, and the CPU is cool enough.

The intake fans can not be heard over the (very quiet, really) sound of the water pump for the CPU cooler.
