Udon ...
« on: April 08, 2011, 08:37:38 AM »
This video made me hungry ...

You ever had an Udon? How is it? I never had one. I remember my Japanese friends taken me to a restaurant and they ordered a lot of different things (lots of sushi) and I ended up ordering something like what he has, but only looked like a beef soup. I was broke and unprepared. We went to purchase and install RAM into my friend's laptop. This was like ... 7 years ago. Such a long time ...

Want udon!

The Chinese supermarket near me sells ready made ones, and I've attempted to make my own. They tasted fine but looked a little weird as I couldn't cut them evenly.

Bah, can't vote for multiple options XD

Anyway, udon is nice. Think the area around Shinano-omachi was specialized on udon. It's quite a simple dish, but tastes good XD But that again, I'm a noodle/ramen/udon-lover :P

If I had to rank all soup-like noodle dishes, I would say Udon is ranked 4th below ramen (3rd) and above soba (5th).

I make udon quite often, but I prefer soba.

The soup is relatively easy to make for soba compared to udon, just get hot water, soy sauce, cooking sake, "dashi", and a hint of sugar. Add in vegetables as you like, pour over the soba, serve. udon is a bit more complex (eh, not really I guess)

Either way, I personally prefer the taste/texture of soba and it's soup.

Oh, zaru-soba is amazing too, it's the one where you have a small... cup with the soup in, and you grab the soba in chunks and eat it by dipping into the soup. Although I know people who put small amounts of the soba into the soup, leave it to let the taste seep in, then eat it (though I would think that it sort of kills the point of eating zaru-soba)

Gah, retarded post was retarded.

I'm going to make udon tomorrow and have it in the pork stock I was making this week.  Basically udon in the soup base you would normally use for ramen.  I'll take pictures of the process.

Making Udon noodles is quite easy and is rather inexpensive... For everyone that wants to make their own ramen, use this link:

http://www.instructables.com/id/How-to-make-REAL-Japanese-ramen-from-scratch/#step1

It's sorta just how to make the noodle part of it, but how easy is it to add and cook the rest of the ingredients?

The Chinese supermarket near me sells ready made ones, and I've attempted to make my own. They tasted fine but looked a little weird as I couldn't cut them evenly.
this, took me a while to learn to make a proper one, lucky me, I live near a university, and there is McDonnalds there nearby, all i had to do was go to McD, and wait for an asian girl, preferably Japanese, I was in luck within 15 minutes, 2 students came by to do some homework in between classes, the girl was Japanese, she used japanese sometimes, it was cute when she got something right she was going "Yay ! Sugoi!"
after a short while when they were preparing to leave I simply approached them and talked to the girl, the guy was obviously jelly as I simply asked a few questions using both english and using Japanese words for vegetables that I can remember from anime, she took out a notebook, and a pencil, and started writing in english, the recipe was so damn complex, but she told me to follow these instructions and it will be awesome, met her a few times since then, learned some basic dishes from her, the fag was jelly all the time, was obvious she was his crush (no wonder, the girl was very pretty, and Asian, natural attract lure for most Caucasians, most, not all) so I kinda interfered him, she once asked me a question in Japanese, I only understood bits, so she wanted to ask me in english, she first asked if i understood the question, I asked her to repeat a little slower, then i got what she asked and answered with a single HAI!

If i find the recipe i'll post you the details, tha twas around 5 years ago, been a while since I used it, I started using a little easier recipe I later found on the net, but gotta say, it was tasty :)

maybe, but tbh, the guy was really jelly, it seemed like every moment I talked with that girl was his years of flirts getting shattered :D
I think she knew, which probably resulted in our convos, I doubt she had any feelings for the poor sod :D

Sorry, I had to...  :P

Difference between ramen and udon:

Ramen:
(click to show/hide)
Usually ramen is freeze dried (dehydrated) and you cook it back to what it should be just like regular pasta or Angel Hair. It's basically the same egg/flour ratio as most pastas and isn't all the great compared to...

Udon:
(click to show/hide)
Freshly made udon is the BEST. Going to a restaurant that freshly makes their udon noodles has no replacement. They add tons of vegs and meats and usually have great stocks. I prefer Chinese over Japanese styles of udon, but both are fantastic compared to Maruchan Ramen crap. Also real udon uses a different type of flour (forgot the type) and uses a higher egg to flour ratio.

Udon is delicious! We usually buy some from our local K mart, i love the udon with the treasure bags, has a lot of meat inside them. Basically udon is beef, chicken, pork, meat rolls, steak, shabu shabu, that are served in noodle soup.

you probably don;'t even notice pasta in a real Udon though, you are overwhelmed with everything else, and when you finish, you are full !

Do I sense an addiction/obsession with meat here?

This is also udon, don't think there was any meat in it at all:

Looks can be deceiving, it was delicious.

Udon noodles are a bit special. I don't like the fat strings either, but udon is an exception XD

I personally prefer udon of the thinner sort. Although having a nice and hot udon of the thick sort can certainly be refreshing on a cold winter day.
