Actually quite a few on that list are getting another season or ova.
OT:
Kimi ni Todoke - hope they will do the rest of the manga when it is done.
spice and wolf - hope they will do the rest of the LN when it is done.
Natsume Yuujinchou - still nice to watch and I don't think another season would fuck it up.
Umineko no Naku Koro ni - even thought the second half of first season wasn't that good I would still like to see Umineko no Naku Koro ni second part animated
Usagi Drop - if they choose not to follow the manga and its time skip.
Baka to Test - Will probably get it when the novel have progressed a bit further.
Full Metal Panic! - Light Novel is almost finished if I remember correctly, so seeing the rest animated would be quite nice
Baccano - Even thought I was happy with the ending I would still like an ova.

If they made a third season they would pretty much ruin the show.

No they would not. It all depends on how well you plan the story.
