Turkey is great. Cold turkey, leftover from a previous meal, makes great sandwiches, with just a little salt and some mayonnaise. Processed turkey aka cold cuts isn't bad (I eat some almost every day) but cooked turkey freshly cut straight from the carcass is the best.
Best of all, though, is the traditional American Thanksgiving dinner -- hot turkey with stuffing, mashed potatoes with gravy, dinner rolls, and mixed vegetables (carrots, broccoli, cauliflower). My grandmother is a traditionalist, so almost every year she prepares this, and more, for our family.
