Please explain to me why One Piece is worth picking up cause im interested

I am not sure what you mean by "grown up", since I am pretty sure the whole series take place during mere ~2 years. Maybe you meant timeskip? Well... you can pick it up after the timeskip, but you will not know who is who and who is he allied with, what are the characters' motivations, their past accomplishments or references to things that happened. You will also miss some of the best scenes in the anime, eg. the Whitebeard War, which concludes the first half.
It's like watching only the last episode of a 13 episode long anime. I'd rather not watch it at all. You would also watch only a few episodes until the you catch up and to be honest not much has happened since the time skip, yet.

If you have to choose between One Piece and Fairy Tail, you would do much better going with One Piece.
One Piece has a lot more imagination and the writing team is willing to blend both writing chutzpah and fun-style verve into the plot. One Piece also makes better use of both sound effects AND orchestral music to signal or support events. I like Fairy Tails more compact storyline though. One Piece also has more mature writing features such as both visual and plot-based red herrings (similar to Guilty Crown) which are pleasing to those who like to savor such things. Fairy Tail also has a subtle change about 5 manga chapters after the first character popularity contest. Taking the writing/illustration for Lucy prior to the contest as the "normal" baseline, after the contest for a number of chapters, there seemed to be a bigger push on Lucy's sexyness and presence as if the author panicked and overcompensated to try to push his main character back up. But later on, it seems he gave up on that and decided to make the manga based upon a set of main characters which could have separate parallel storylines going at once. One Piece didn't seem to have such changes and kept on a fairly even keel; you could see the art style mature and change book after book though.
The one piece writing team has a great sense of world building. While the attention to detail varies, in many cases, even buildings are treated as significant objects (such that non-essential throwaway details are provided just to be "complete"). Then, all of a sudden, some episodes might lack much detail as if they were saving up their time budget to work on something else.

Don't watch it. I can't help it, but it seems to be terrible in so many ways, starting with animation, ending with rather generic, repetitive story, that it's not worth the occasional good gag. People say that there is amazing character development, but, well, again, I can't help it but compare it to a dunkbeetle developing a ball of dunk. It's long and not very interesting to look at... yet it happens and has great ... integrity.
Honestly, I haven't seen all that many episodes, so this might not be very objective, but then again, I'm not much into the "Oh, but it get's really good after you watch the first 50 hours!" type of stuff, which just might be the problem here.

I've been watching all 3 shows (One Piece, Naruto & Bleach) since the first year or so that they've started. There are many reasons why One Piece is better than Naruto and Bleach. The most striking would be that Luffy is a lot more fun to watch than Naruto and Ichigo.
The latter are simply pussies that try too hard, both those shows are based at how they think they suck the whole time and do some over the top thing once in a while without real story continuity (the only exception would be Naruto killing Pain when they FINALLY started letting other characters saying he's awesome). I mean come on, Ichigo single-handedly deals with every single crisis soul society faces and he's still treated like an outsider that ain't that strong.
Both shows are trying too hard to keep it running, and their filers...are...just ...horrendous.
Luffy's almost never second-guessing himself, the way he acts and reacts to stuff is always a blast and is a much better character to "look up to". We're often reminded why the people he interacts with respect him, his notoriety grows at a believable pace throughout the story and his voice alone should be enough to get you to watch it. The fillers are as dumb/boring as the next thing but at least they happen to the main cast and during the story's continuity.
But most importantly... One Piece still cracks me up sometimes while Naruto and Bleach's humor is still dumb as fuck, use the same gags over and over and simply not funny at all.
Finally...
Naruto = Kakebushin no Jutsu
Bleach = Getsuga Tensho
One Piece = What do you know, he gets new moves sometimes!
Almost every popular anime are worth watching, they don't get popular for no reason... except those fan-service-filled bullshits (which neither of the three are).
