FF7 has probably the most useful system and a very good story. As game needs those FF7 does deliver, however characters aren't very popular with many people.
What a proper FF needs is a defined class system like in several FFs where you had a very defined job system through stones or characters already being those classes. FF7 didn't have a defined job system but through the proper use of materia any character could become any class so it's also nice.
I think, if I remember correctly, FF4 had the best Job system, you had the stones that gave you jobs, also FFX-2 had a very good job system, like it or not, Job Classes were defined nearly as perfectly in FFX-2 as in FF4, so as far as an FF game goes, this is the right point to take on.
FFXII also had a semi-job system but it was very awkward, I mean, you had access to literally all skills, abilities and equipment which made me incredibly awkward to this game, cuz I hate having too many options at once. When FFXII-Zodiac or what it's called came out I was happy, until I learned it's only for Japan so fuck it, every character could take on a job and was strictly limited to gear, skills and abilities of said Job.
Far as I seen FFXIII didn't have a job system so it was really hard for me to play that game and therefore I decided I will not play it at all.
Among the other newer games of FF franchisee FFIX also had a defined job system, every character was already defined into a class, which worked out perfectly well. The only problem I saw with FF9 was not enough characters to complete even half of the jobs known in FF. On the otehr hand, jobs selected in the game were excellent and characters were very interesting.
FF8 had very little to do with Job System as well, it was strictly limited to what GF you had equipped and what skills the GF had, characters themselves had literally no powers at all, only limited to attack and limit breaks. But that also worked out well for the game.
Now, FF vs XIII, from the videos I seen, have absolutely no job system, battle system looks weird at best, characters are ripoff's from other games, one of the characters even looks like Rufus with black hair (FF7) which is completely weird.
The setting of the FFvsXIII also feels forced and personally I don't like it.
I would very much like to see a normal FF game that's not focused on looking good but focused on a story that takes more than 12 hours to complete.

It's a matter of opinion I suppose, but it's hard to believe anyone would enjoy FF 1, 2, or 3 more than 7. FFII I found was particularly disagreeable and broken, to the point that I seriously considered violence to inanimate objects after so many TPKs. Actually, I think that game hates me, personally.

One is very nostalgic. But it's like playing a Dragon Quest game. You can't help but feel stuck in the past with a very bare bones gameplay system. At least the remakes remove the D&D-esque spell system and replace it with MP.

Do you mean the US III or Japan's III? Because the US III is really Japan's VI which is an amazing game, one of the best Final Fantasy games ever made. I'm not sure I would say it is better than VII but I am sure you could find people who would argue it is.

FFVI is story wise the best FF in FF history.
