If You Had To Choose Just One...

Kaleido Star
Japanese girl goes to America to audition for Kaleido Star (think Cirque Du Soleil), almost everything about Kaleido Star is shown (management, techs, marketing, practices, shows, competitions, rivalries, dorms). My favorite type of anime really. The character progression's beautifully done but most importantly : Sora's just awesome.

Revolutionary Girl Utena.
The character development, the lampooning of stereotypes, the art style, the plot, the music, and pretty much everything about it is fantastic. Kozue is my favorite character ever in any anime I've ever seen.

Just one, eh? Well, I could pick something off my top 5 but I don't think I'd actually choose one of those because it doesn't have the rewatch value of what I'm about to tell you...
Dragon Ball Z
I had it in my childhood and I can rewatch it a billion times and never get tired of it. While something like Claymore, Code Geass, Death Note or Mnemosyne might be great, I couldn't rewatch them so many times or just watch 20 episodes in a row without even the slightest hint of boredom or a headache or anything else.
I think few animes can compete really with the rewatchability of DBZ... Most of the modern shōnen are filled with massive filler arcs while DBZ if it actually had any fillers never felt like it did.

Clannad - It made me laugh, it made me cry. Never since have i seen an anime as touching as this one.

Clannad got me into anime, so far I have never seen a better one (one comes really close but only 1 :P)
