If you haven't worked out in a long time it's normal that you'd be really sore when you first start doing it but after you're actively doing it you won't be sore like that anymore. If you haven't improved at all though you should add more and push yourself anyways or you're never really going to see any improvement.
Small weight + lots of reps is best for toning. Large weight + few reps is best for bulking. So given that you're a guy (right?), I presume you'd want to do the heaviest you can do and then just do as many of those as you can... it probably won't be more than just a few, and then you do another muscle group. Try to do a push/pull exercise for each. It may also help to dish out like $40 or however much trainers are there to see one for an hour whenever you feel like you plateau and nothing you do is helping. They should be able to help you change things up and help you out with a plan to work towards for the following month or something. Just tell them that's what you're wanting since obviously they'll want you to see them every day or two or three times a week but unless you have money pouring out of your ears you're going to be more likely able to do once a month or maybe once every other month or some such.
The fastest way you're going to see improvement is as soon as something becomes kind of easy you shock your muscles and change to something completely different. So if you were running on a treadmill for instance then you'd switch to a bike or elliptical and so on, and keep them guessing.
