Upload amount not reflected correctly

It looks like you downloaded all your files while you were logged out/did not have an account, since none of your torrents have any stats for download on your profile. Did you remove the torrent from your client and then redownload the .TORRENT file while logged in or did you simply modify the tracker URL?

To me, it looks like you modified the tracker URL to seed on your account. If that's the case, then some of the uploaded data will have come from BEFORE you changed the tracker URL.

I did see the FAQ related to this and I think I followed it correctly. I deleted the torrent out of uTorrent, redownloaded the torrent while logged in and pointed it to the existing directory. It did a check, then went into seeding mode.
I then went to my profile and checked that the torrent is now listed.

Then the only reason I think think of that would cause this is your client losing connection to the tracker (whether being terminated unexpectedly, losing internet, tracker down, timeout, etc.) and hence the update getting lost :\ But that really shouldn't cause gigabytes of difference...

Well I'm actually connected to my computer remotely and I've been watching the torrents, I haven't noticed any connectivity issues.
I also have this constantly running so if there was any dips I would pick up on it:


This is also not showing any drops:


Although I did notice it says 'not allowed' the same way for all the torrents as seen below, not sure if this is normal:
