Martial Arts on a more serious or "correct" tone

I don't have anything against super powers or fantasy, I'm just wanting to watch something different that differs from the normal "squat down have a crap and become 10 times more powerful with a glowing radiance" but I'm not disregarding it completely.
After all the suggestions, I'm going to take a look at the following: -
* Avenger - I like cyberpunk anyway
* Shura no Toki - It's something that I wouldn't ordinarily watch with regards to the era it's set in, but I'll give it a go
* Kaze no Yojimbo - This looks good, maybe my kind of anime
* Seirei no Moribito - As with Shura no Toki but the synopsis makes it sound interesting so I'l give this a go too
* Air Master - This one looks like it will be a distraction rather then engrossing to watch but I'll give it a go nonetheless
I'm not sure about Breaker, I'm not all that much of a big fan of manga, I prefer novels (I tend to enjoy reading into the story rather then just the short speech bubbles).
Well, thanks for the recommendations, these should keep me entertained for a while but if you think of any more, please do mention.

Be warned though, production values are distractingly lacking at times. The story itself is good, as it's mostly a remake of Kurosawa's Yojimbo. Shura no Toki covers several periods, MC will face Mushashi Miyamoto, Yagyu Juubei, Okita Souji and Hijikata Toshizo among others.

I'd second Shigurui. I remember it being fairly realistic in the handling of the characters and actual battles, and quite high on the gore (if that's a turn-off). It starts with two skilled warriors about to battle each other in a tournament (one missing an arm and the other blind), and then flashes back to when they were young and able-bodied upstarts to show how they both got to that point and received their wounds. It follows their training days and fulfills your wish for drama and dealing with human strength and weakness.
Perhaps Samurai X? I'm not sure it's quite what you're after, but it might be worth a look for you.
