Hey there, I'm looking for something serious but with comedy in some parts. Also I'd like some really "must watch" classic anime's if i had to give an example Cowboy Bebop would fit nicely. That's it really, thanks!

Check the 10's on my list in my profile. I'd say they're must-watch's.

Also, I hate Ghibli. Most people are spastic over them though so don't take my word for it.

Seinen and Slice of Life cannot describe the same title, because daily life is too boring to be called a plot. Ecchi/fanservice is not plot either.

I'm not really a big fan of mecha, so i tend to shy away from them.

since I see a few space odysees listed here, I'll just go ahead and recommend:

Tytania (sadly isn't complete, the novels haven't been translated either)
Starship operators (same here, but the end is indeed a good one)
Infinite ryvius (has mecha, but doesn't focus on it, instead focussing more on sociological phenomena)
Mouretsu Pirates (a pure comedy)
Irresponsible captain tylor (kind of ridiculous at times)

If you liked crest of the stars, but want it with more comedy, those should cover you. Well ryvius is not really comedy though, and I hated the MC, but it was a great show.

I think in Trigun is a nice recommendation.

But you will have to find it on a different torrent site than BakaBT.
