Edit3: Also, yeah, but "Inuyasha Concluded" is better than nothing, right?
Definitely!

Plus the "Inuyasha Concluded" section was further up in page you linked; it had a section on the "Inuyasha" show as well.
Yeah, the word Chinese on its own is a little more likely to refer to Mandarin.
70730 at ADC [the Season 1, Disc 8] is a custom comprising the Japan disc and language tracks taken from various retail DVDs.
65273 at ADC ["Chn subs only"] is the Taiwan retail release. It has Japanese & Mandarin audio.
The Chinese dub on the custom Disc 8 is most likely both Mandarin and from the Taiwanese retail disc. Looks like the one who made the custom grabbed a DVD5 of 65273 from the same uploader.
Sorry I couldn't be of help.
You
were a help. Even if so far it's not yet confirmed if there was a release w/Cantonese or if/where there's such a version, we're a bit closer.

Now I know it was definitely broadcast in Cantonese-speaking Hong Kong on/by Animax.
...One of the Malaysian-based eBay stores were selling
Fairy Tail retail boxsets with Cantonese audio. Not that I'm trying to track down that atm but clearly anime is at least released in that language.
