We'll I've been eating birch leaves since I was kiddo so maybe it's learned? I like to use fresh leaves, dried ones have stronger taste. It's important what kind of birch it is. There's two kinds of birches, the
downy birch doesn't make good tea while the
silver birch does.
Blackcurrant tea from leaves/flowers like any other kind of tea, fresh or dried. I quess you could use dried berries too, never tried.
From billberry you can use leaves for tea, but they're pretty tasteless, the berries work better but must be dried. I quess nothing stops from using the flowers but they're so tasty to eat when fresh I can't imagine using them for tea.

Oh yeah, there's a lot of billberry tea around in stores, that has indian-ceylon in it. It's not bad either but if you don't like black tea...
Oh and spruce shoots make tea. Very strong and the taste is pretty unique. You either like it or hate it.
