Mmmm... Pancakes! Muffins can be most delectable as well.
Canadians do that, too. A nice big stack of yummy pancakes with gallons of maple syrup, maybe some sausages, ham, and/or bacon, is a very traditional big breakfast.
Why?!
Because this morning it is -34 C outside right now (-45 C wind chill) and that quick energy boost is mighty welcome when contemplating forging out into the cold and dark.
A bit of body fat helps a great deal, too, despite the constant whinging from the public health authorities.
I don't think I've ever eaten pancakes as a dessert. They're not light enough and, without the sweet garnishings, they lean toward the savory side. Some of the pancake dishes served at restaurants could be considered dessert if their serving sizes were severely reduced, but they generally are not.
