I was reading something that said like 99% of people possess a gene that makes them immune to the prions that cause encephalopathy in humans who commit cannibalism, the theory was that most of our ancestors lived through a period where they had to eat to survive, those that survived had the gene so it was passed on to us. Cows aren't resistant because well, cows never were cannibals until humans started feeding them ground up cow parts in our modern industrial farms.
