Tenchi Muyo! (The origional, Universe and GXP are OK, and Tokyo is just...no.)
Gundam 0083 Stardust Memories (Only higher than 8th MS team because of the first theme song, no carrots please.)
Gundam 8th MS Team
Zoids Guardian Force (Yes I know the other series are completly crappy due to the whole Pokemon-esque battle thing, plus the EngDub cast was good, and so was the music)
Outlaw Star
Cowboy Beebop
Trigun
Yuyu Hakusho
Dragonball (Certainly not Z or GT)
Duel! Parallel Trouble Adventures(I'm pretty sure this was made by the same people that made Tenchi, it has a lot of similarities.)

I've been wondering about Cardcaptor Sakura. I've been interested in seeing it, but it's run on TV and from the commercials seemed to be more of a pokemon type show geared toward kiddies. Would I be right in my assumtion that it's more of a kids show? Or is it like other animes where the dubbed version was changed into a kids show, but the original is more adult.

It has both approaches. It is a kids show with some deeper themes thrown into the background. Kids won't notice them but it keeps the interest up for the adults. The first half is more for kids than the second one if I recall correctly.
Especially the movies have a more mature feeling to them.
